Cream of Butternut squash

- 2 peeled squash
- 2 chopped onions
- 2 cloves garlic
- Vegetable stock
- Heavy cream
- Chop squash and sweat with onions & garlic.
- Add stock to cover squash, & boil till soft.
- Puree & pass through a sieve.
- Add heavy cream to taste and adjust seasoning.
- Serve with croutons & chopped chives
