Cream of Butternut squash
For those chillier fall evenings
Ingredients
  • 2 peeled squash
  • 2 chopped onions
  • 2 cloves garlic
  • Vegetable stock
  • Heavy cream
Method
  1. Chop squash and sweat with onions & garlic.
  2. Add stock to cover squash, & boil till soft.
  3. Puree & pass through a sieve.
  4. Add heavy cream to taste and adjust seasoning.
  5. Serve with croutons & chopped chives
Vary with the addition of celery root
