Blueberry Muffins
A classic at Blueberry Hill
Makes 12 muffins
6 tablespoons of room temperature butter
1.5 cups sugar
2 eggs
2 cups unbleached flour
1/4 teaspoons salt
2 teaspoons baking powder
1/2 cup milk
1 teaspoon vanilla extract
1 cup blueberries, frozen or fresh
3 tablespoons sugar mixed with 1 teaspoon cinnamon
preheat oven to 375. Grease the top and insides of muffin pans.
In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at at time. Add vanilla.
Whisk together the flour, salt, and baking powder. Add this and the milk to the creamed mixture.
Add the berries and mix gently till combined. Do not over-mix.
Fill muffin tins and bake for 30 minutes or so. (Check for doneness and cook more if needed.)
